Ham and Spinach Quiche



  1. preheat oven to 350
  2. saute the onion and garlic in the butter in a skillet over medium heat for 8 minutes. Stir in the spinach, ham, bell pepper, salt, pepper, and nutmeg.
  3. saute for 3 minutes or until all the liquid from the spinach evaporates
  4. combine the ricotta, mozzarella, and parmesan cheese in a bowl and mix well. Stir in the eggs. Add the spinach mixture and mix well. Spoon in the pie shell.
  5. bake at 350 for 40 minutes or until set and the top is brown. Let stand 5 minutes before cutting into wedges

May freeze for future use. Freeze entire quiche before baking.
