Ham and Spinach Quiche
- 1 all ready pie pastry, thawed
- 5 oz frozen chopped spinach, thawed
- 1 small onion, chopped
- 1 clove garlic, minced
- 3 Tbsp butter
- 1/2 cup chopped ham
- 2 Tbsp chopped bell pepper
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp nutmeg
- 15 oz ricotta cheese
- 8 oz mozzarella cheese, shredded
- 1 cup grated parmesan cheese
- 3 eggs, beaten
- preheat oven to 350
- saute the onion and garlic in the butter in a skillet over medium heat for 8 minutes. Stir in the spinach, ham, bell pepper, salt, pepper, and nutmeg.
- saute for 3 minutes or until all the liquid from the spinach evaporates
- combine the ricotta, mozzarella, and parmesan cheese in a bowl and mix well. Stir in the eggs. Add the spinach mixture and mix well. Spoon in the pie shell.
- bake at 350 for 40 minutes or until set and the top is brown. Let stand 5 minutes before cutting into wedges
May freeze for future use. Freeze entire quiche before baking.
